These whole dried guajillo chillies are moderately hot. They are smooth, shiny, and reddish-brown in appearance. Their tough skin means they need to be soaked longer than other chillies. Use them to make marinades, pastes and salsas.

Ancho chillies are poblano peppers that have been roasted and dried. They have a sweet and smoky flavour which adds richness to cooking. They have a mild heat and are reminiscent to raisins in flavour. These flakes are perfect for sprinkling over an array of dishes including salads, soups, tacos and much more. Hydrate them for 5 minutes in hot water, remove seeds and vein, stuff with fresh cheese, soak them in whipped egg whites and fry them in very hot oil for 5 minutes. Serve with a tomato sauce. This is a delicious alternative to the poblano stuffed chillies.

Chipotle chillies are smoked, dried Jalapeño peppers. Predominantly used for their mild smoky spiciness. Essential to Mexican cuisine, add to chilli, salsas, soups, stews, rubs and marinades.

Add a mild heat to many dishes including salsa verde. Their flavour is not so ‘hot’ as fresh jalapenos, more warm and full. They can be used instead of or with fresh, and will add a zing to your chilli con carne and other Mexican dishes. Scoville Scale - 3,500 units - Mild heat.

Each press comes with a plastic sheet that must be placed between the 2 walls, as the dough must not touch the metal. Rinse with hot water and dry thoroughly prior to initial use. After use, the press should be relatively clean, and a wipe down with a dry towel should suffice. If that is not enough, clean immediately with hot water and a brush. Rinse and dry thoroughly.
